Head Skimming

Hi im new in this forum . im planning to install yamaha vixion block to my jupiter mx. As we all know vixion dish piston have lower compression ratio (10.4 : 1) compare to jupiter mx ( 10.9 : 1) (correct me if im wrong). So im planing to raise the CR. Which one is better, to skim the cylinder block or to skim the head and how much mm ? Please tell me if this topic already discuss in this forum.thnx
